PORCELANA:

The bean is, delicate and fine, almost white, hence the name Porcelain. “Criollo” cocoa is a pure bread, of which only 3,000 kilos are harvested a year.  

 

Amedei has the honour of growing it and processing it into a product of incredible flavour, among the most aromatic, well-rounded and harmonious ever existed in the history of chocolate.

 

Amedei manages this plantation of Blanco di Criollo, Only 20 000 Bars are produced every year and each of them is numbered, by hand.

ACERO 95:

Amedei challenged its philosophy and expertise by creating a 95% dark chocolate with a bold, sweet flavour. The absolute innovation of this product lies in the substitution of cane sugar with maple sugar, a high-quality ingredient with a sweet, sophisticated taste obtained from the sap extracted from Canadian maple trees.

The "FAMILY TREASURE" This blend expresses the Amedei philosophy. Combined here are cocoas of 9 plantations which, over the years have been discovered, restored and rendered productive again by Amedei.  From the harvest of these 9 plantations Cecilia Tessieri created a powerful and well balanced dark chocolate in which the aromas of each plantation persists in its unmistakable flavour.

CHUAO:

The name Chuao brings to mind the legend of Mayan cocoa, the sacred drink from the primeval earthly paradise where the “food of the gods” used to grow. Chuao was a true challenge for Amedei: difficult to purchase and process, this wild bean needed to be “tamed” as no-one had ever tasted it in its pure form. After an aging period of 20 days, this chocolate – unlike any other – keeps developing its taste, improving its acidity and aroma.

BLANCO DE CRIOLLO
